Power bites (or boulder bites?)

These are delicious and energizing little bites of heaven. For some unknown reason (other than she has her own special name for many things) my mother-in-law calls these Boulder Bites (sorry if we’ve stolen this name from anyone…can you tell I’m a librarian with severe copyright anxiety)? I like to eat one of these with my coffee in the morning or before or after a workout or as an after dinner snack or while on a long run or…

My kids LOVE these and totally think they’re on the par with dessert. They’re gluten free if you use gluten free oats and vegan if you go with the maple syrup and not honey. I recommend 70 percent or higher dark chocolate to keep the sugar content low.

Ingredients:

  • One cup of peanut butter (or any nut butter - (we’ve also used sunflower seed butter for anyone with allergies)

  • 1/3 cup of pure maple syrup. Honey is also a good option.

  • 1 tsp vanilla extract

  • 1.5 cups organic rolled oats (these are available in a natural, gluten-free option)

  • 1/2 cup of shredded coconut

  • 1/3 cup of 70% + dark chocolate chips

Steps:

  • Stir together the wet ingredients

  • Add in the oats and shredded coconut

  • Stir in the chocolate chips

  • Roll the “dough” into balls. If it feels too dry, add a couple teaspoons of water.

  • These can be devoured immediately, but are better refrigerated for an hour or so.
